So what should I do with that cooked pumpkin? Let’s make dessert!!
Here’s the recipe.
1 sm can of Pumpkin (15 oz.) or 2 cups soft, mashed cooked pumpkin
2 tsp. of pumpkin pie spice
1/2 cup of evaporated milk
1/3 cup of sugar
1/4 tsp. salt
1/2 box yellow or white cake mix — dry
1/2 -3/4 stick of butter — melted
Pre heat solar oven. Mix all ingredients together except cake mix and butter. Pour into greased round, black pot or baking pan. Sprinkle cake mix over the top of pumpkin mix. Drizzle melted butter over top of mix. Bake uncovered for 2-3 hours in solar oven. The dry mix will cook into the moist pumpkin batter and will brown a little on the top, depending on the solar oven.
