My mother was a wonderful cook. This recipe is hers. I don’t know where she got it or if she just made it up, but it was standard fare at our house. Recently I made a batch in the solar oven to go with my Nacho Meatloaf. Okay, I know that using Minute Rice isn’t exactly gourmet cooking, and I usually use the real stuff too, but this was easy, fast, and tastes good too. Feel free to use any rice you like – just don’t tell my mother.
SPANISH RICE PRONTO
- 1 med onion chopped
- 1/2 green pepper, diced
- 1 1/3 cups Minute Rice
- 1 1/2 c water (reduce by 1/2 for solar oven)
- 1 tsp salt
- dash of pepper
- 1/2 tsp chili powder ( or more to taste)
- 2 (8 oz) cans tomato sauce
Pre-heat solar oven while preparing recipe.
(If cooking stove top, saute onions in oil before adding additional ingredients) Add all ingredients to pan. Cook in solar oven 1 – 1/2 hours until liquid is absorbed and rice is tender.
