Roasting a chicken or turkey is so simple, but I quit cooking poultry this way years ago to avoid heating up my kitchen. But once I discovered that roasting a chicken in the solar oven is so easy, it is my new favorite way to cook chicken
Baked Chicken

1 whole chicken, thawed

melted butter or margarine

dry chicken rub or seasoning, if desired

Pre-heat solar oven while preparing the chicken.
Wash and dry the chicken. Place into a pot. Rub the chicken with melted butter, and seasonings, if desired. Cover and cook in solar oven 3 – 4 hours.

It’s so easy; isn’t it! It’s one of the hardest things to get people to believe, too. Don’t know why. But, I love the moistness of the breast meat — something amost impossible to achieve without special attention in a conventional oven.
