Beans, Beans, Beans! We love them. They are easy to make, taste good, and are so good for you. This week I made Lima Beans. I put about 2 cups of rinsed Lima beans in the pot. I do not usually soak my beans. The beans have plenty of time to soak and plump up with the slow cooking method. I also added some chopped bacon for flavor. Sometimes I add ham. No particular amount — just however much you have and how much you want in the beans. Then I added enough water to cover the beans, plus extra water to allow for the beans to “soak & plump up.” I let the beans simmer in the solar oven all afternoon — about 4 hours, maybe a little longer. Yummy, Hot, Delicious Beans!
