Christmas is nearly here and there is always so much to get done. Here is a simple lemon pie that you can quickly stir up for dessert. Since it does not take much monitoring, baking this lemon pie in your solar oven will free you up for more important things – like making sure Santa knows you’ve been very, very good this year.
Easy Lemon Pie
- 1 whole large lemon
- 4 eggs
- 1 1/2 cup sugar
- 1 tsp vanilla
- 1 stick of melted butter
- 1 unbaked pie shell
Pre-heat the solar oven while preparing the ingredients.
Cut the lemon into large chunks. Discard the seeds. (I also discard the peel, but that is only preference.) Place the lemon in a blender or food processor. Give it a good whiz to break it down. Add each of the other ingredients and give it another whiz to stir everything together. Pour into the unbaked pie shell. Bake in solar oven until pie is firm and golden brown. I baked this pie for three hours in the solar oven. (In the kitchen, bake at 350° for 40 minutes.)
